With its subtropical climate and freshwater reserves, Todos Santos is a veritable oasis in the semi-desert. It was precisely these fertile lands that gave rise to the town, which started out as an outpost established by friars and then a mission to tend the orchards that fed the residents of La Paz.

● Fish tacos, batter-fried and served in handmade flour tortillas with lime, salsa and cabbage, are a classic. Other musts are the garlic or coconut shrimp, ceviche (marinated fish or seafood), pescado zarandeado (chili-rubbed fish), pescado tatemado (fire-roasted fish) or baked fish en papillote.
Besides all that you simply can’t leave without trying the lobster in butter, which is famous the length and breadth of the Baja California Peninsula, the fire-roasted clams (almejas tatemadas) or the oyster bar at Oystera, where you can snack on fried oysters along with a drink.
For South Californian cuisine with a Mediterranean influence, El Mirador Restaurante, Benno or Dūm are your best bets.

FARM-TO-TABLE ༅
This popular concept, immortalized by restaurants like Jazamango, Hierbabuena and The Garden, makes use of the freshest, best-quality ingredients produced by local orchards and ranches.

You can enjoy all-time favorites like chiles en nogada (chili peppers stuffed with ground meat and dried fruits and nuts, in a creamy walnut sauce) or the famous machaca (shredded dried meat) with eggs, knowing that every ingredient is organic. The farm-to-table trend has paved the way for healthy eating, so expect to find plenty of salad options.

UNEXPECTED TWISTS ༅
In Todos Santos, you’ll come across Mexican dishes with a twist, either in terms of the ingredients or the way they are used. One example is stingray machaca, whose soft, flavorsome texture lingers in the mouth. Another way to try it is in a quesadilla or taco.

Or how about some shrimp mixiotes (shrimp instead of the traditional meat, wrapped in an agave leaf and steamed), fish balls or chilis stuffed with salmon in walnut sauce? All these dishes and more are on the menus at Tenoch and Cocina de Campo by Agricole.

● For dessert, try date bread or fresh corn bread, a spongy cake made with fresh corn kernels and unrefined piloncillo sugar.
A more refreshing, natural choice is fruit. Recently harvested citrus fruits, figs and papaya are used in ice-creams and sorbets or turned into conserves and pastes known as ate.
Traditional candies include guayabate, mangate and pitahayate, chewy pastes made with guava, mango and pitahaya (dragon fruit), respectively. Or how about some sweet bean or cheese empanadas? And who could pass up a delicious date-and-walnut candy?

● After sampling a few classic Northern dishes, like machaca burritos, meat empanadas or chilorio ranchero (a spicy pork dish), it’s off to the breweries and bars to learn what Baja California Sur is up to.
The Mangus Snack Bar stocks a wide variety of craft beers, including the Baja Brewing Company brand. Then there’s Todos Santos Brewing, which carries not only beer but craft sodas. Here you can even take a “Beer Education” class to learn about the beer-making process.

At Los Colibrís Casitas, for example, chef Iker Algorri will teach you to how to make the perfect margarita and a Mexican dish, to the beat of Latin rhythms.
The cooking classes at Desierto Azul are based on natural, healthy foods and plant-based recipes that you can taste at the end of the class, while budding mixologists can learn to make a personalized cocktail at Kimpton Mas Olas.
Another option is to visit the local farmers’ markets and ranches, where you can talk to the owners face to face and leave satisfied that your purchases have made a real difference.
